AKA my favorite summer dish. It is simple which helps when it’s hot and you don’t feel like cooking for ages, it is good, it is light and can be prepared ahead and served cold. What else would you want from a summer dish?!?! Oh is pretty as well: I sometimes press it into a bowl lined with slices of tomatoes and I can assure you it looks pretty good!
- 3-4 oz barley per person
- 2 tbsp pesto
- 1 tomato
- Cook the barley in salted boiling for about 20 minutes. It is ready when it is soft but still has some bite. Meanwhile, cut the tomato and put it in a dish or in a bowl add the two spoons of pesto and mix everything up. If needed add some water from the boiling barely to loosen up the pesto. When the barley is ready, drain it and mix it with the pesto and the tomato.
