Hey Gaz! You can make really amazing stretchy vegan 'mozzarella' by using Glutinous Rice Flour instead of the Tapioca. It's found in Chinese/Korean/ Thai supermarkets and usually used to make mochi or chewy rice cakes. The flour thickens it, but also makes it stretchy.
So if you add the rice flour to any cheese, when you melt it, it stretches!

This made me laugh. As an Italian, I can confidently say, "traditional" pizza sauce for a rustic pizza like that is tinned plum tomatoes olive oil, salt, and pepper (torn basil optional) – not cooked, just hand broken up and put onto the dough. Very simple, very easy, the way Italian cooking is supposed to be.
