Ingredients to make Saucy Greek Burgers

For yogurt sauce:
12 Ounces plain yogurt
2 Small garlic cloves
1/4 Teaspoon salt
3 Tablespoons shredded fresh mint leaves, or to taste

For burgers:
2 Pounds ground lamb
1/2 Cup crumbled feta cheese
1/2 cup finely chopped pitted Kalamata olives, 12 to 15
6 small pita loaves
2 small vine-ripened tomatoes, sliced
2 small green bell peppers, cut in rings
1 red onion, sliced thin

Directions to make Saucy Greek Burgers

Step 1:Make yogurt sauce: Mince and mash the garlic with the salt. Drain yogurt in a sieve lined with a dampened paper towel set over a bowl 30 minutes. Transfer to a small bowl and combine with the garlic and mint.

Step 2:Prepare grill and oil rack. Set grill 5-6 inches from coals. In a bowl gently combine the lamb,feta and olives. Form into 6 patties about 1” thick. Season to taste with salt and pepper. Grill for about 7 minutes per side for medium-rare.

Step 3:Split pitas form a pocket.Transfer burgers to pita pockets and top with tomatoes, bell peppers and onion. Serve burgers with yogurt sauce.

Instructions to make Greek Butter Cookies Recipe:

Melt butter in microwave on high in large microwave safe dish for thirty seconds. It doesn’t need to be completely melted. Pour melted butter into large mixing bowl and beat on high speed with a hand mixer until creamy in texture. Add powdered sugar and beat on low until sugar is mixed in and then move to high speed.

Beat on high for about a minute. Add egg yolk and vanilla extract and beat until well blended. Set mixer to medium and beat in flour until well mixed.

Mixture will be crumbly and eventually start to collect together.Preheat oven to 350. Roll dough into a 1 to a 1 ½ inch ball and flatten slightly with your hand. Place on ungreased cookie sheet an inch apart. Bake 15-20 minutes at 350 until cookie has a slight golden color.

Let cool completely on cookie sheet. Using a flour sifter, place extra powdered sugar in it and shake over the cooled cookies. I serve them in baking cups – it makes it a lot easier.

Ingredients to make Traditional Greek Souvlaki

500 grams / 1 lb of pork in cubes
8 bamboo skewers
1/2 cup of olive oil
1 tablespoon of vinegar (wine vinegar)
1 pinch greek oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
8 large pita breads
Greek yoghurt or Greek tzatziki
Shreaded salad of lettuce, tomatoes, onion, herbs etc.

Directions to make Traditional Greek Souvlaki

Step 1:Cut the pork into small cubes and carefully thread onto the skewers. In a bowl place the olive oil, the wine vinegar, the oregano, the salt and the black pepper. Place the skewers with the pork in a dish and pour the marinade over them. Cover with plastic wrap and refrigerate for several hours or ovenight.

Step 2:Preheat your grill or barbeque. Place the souvlaki skewers over a medium heat and cook each side. Brush with the marinade and turn to cook evenly

Step 3:Brush the pita breads with olive oil and cook them on the grill. When the pita and the souvlaki are ready, pull the meat off one skewer into the pita, add tzatziki or greek yoghurt and the shreaded salad. Roll the pita to form a tight cone and wrap it in kitchen or other suitable paper. Serve hot.

1 pound uncooked angel hair pasta
1 tablespoon olive oil
4 (6-ounce) skinless, boneless chicken breasts, halved
2 cups chopped red onion

1/2 teaspoon dried oregano
1-2 garlic cloves, crushed
