Mugi – Full-bodied miso of Non-GMO organic whole soybeans and organic barley aged in cedar kegs for 18 months in the traditional manner by one of the oldest miso companies in Japan. The most popular and widely used miso. Excellent for every day use, in any season.
Shiro – The golden paste Shiro Miso is the sweetest, lightest, youngest miso, and is extremely popular in Japan. It has half the salt of other misos and is also called ‘sweet white’ or ‘Kyoto-style’ miso. It’s ideal for warm weather as a seasoning, a dip, in soups and dressings, as a marinade, or spread on potatoes, sweet corn, and bread.
Genmai – A mellow, sweet, golden miso paste of Non-GMO organic whole soybeans and organic brown rice traditionally aged in cedar kegs for up to 18 months. An all-purpose miso, great for every day use.
Hacho – The heartiest miso, aged for three years in the traditional manner by the Hatcho Miso Company that began over 650 years ago and uses methods dating to 1337. Thick, dark, and rich.
