First steeping: Rinse to remove “snow” if needed. 3-5 grams of fine tea leaves with 6 fl oz. water (170-190° F), and brew for 3-5 mins.
Re-steeping:The leaves are good for 3-4 infusions.Add a little more time for each subsequent infusion.

Ginger Mint Iced Green Tea
1. In a large saucepan over high heat, combine the ginger (3 ounces, unpealed and sliced) and 6 cups of water and bring to a boil. Remove from heat and add the mint (1 cup mint leaves) and Elitea Dragon Well green tea. Cover and let steep for around 15 to 20 mins.
2. Strain the liquid into a large pitcher. Add the honey (half cup) and lemon juice (2 tablespoons), stir.
