Fromage fort

Why didn’t I find out before? As soon as I saw fromage fort on the smitten kitchen I knew I had to try making it. I had so many bits and pieces of cheese leftover and who doesn’t love a cheesy spread??

So last week I made some. It was a revelation! Perfect for spreading on pretty much anything, but I bet it would make a great sauce for a gratin too.

Anyway delicious! And no need to measure anything! Just use whatever you have left in the fridge and it will be delicious!


  • Left over cheese
  • Dry white wine
  • 1 small clove garlic
  • 1-2 spoon butter


  1. If most of your cheese is hard and dried up as mine was, soak it in a bit of the white wine for half hour or so so it is easier to blend.
  2. Blend the cheese, garlic and wine and keep adding wine and butter until you have the desired consistency. I wanted mine smooth and cream cheese like so I blended rather long, but you might like it different.
  3. Spread on bread, crackers or really anything and enjoy!
