Masala brinjal is a typical Indian recipe to get some variation in taste. Many people usually don’t like brinjal served on their plate. But if the recipe is bit spicy and mouth watering then definitely they would enjoy a lot. Brinjal, which is commonly known as eggplant are one of the easily available vegetable in the market and that too in an affordable range. As brinjal is reach in potassium so, it could be given to kids.

Masala brinjal preparation is less time taking. It’s not only nutritious, but easily digestible also. It becomes soft after cooking and absorbs all the flavor of spices added to it. Following is one of the tastiest recipes for Masala Brinjal which you can cook easily at home.

  • 4 medium sized brinjal
  • 2 medium sized, onion (finely chopped)
  • 1 tablespoon ginger garlic paste
  • 1 cup chopped tomatoes
  • 1 teaspoon coriander powder
  • 1 teaspoon red chilly powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • ½ tablespoon garam masala powder
  • Amchur powder/ dried mango powder or one can use the lime juice as its substitute.
  • Fresh coriander leaves (chopped) for garnishing
  • 1-2 tablespoon butter or refined oil
  • One cup water
  • Salt to taste

Method

Wash brinjals properly and cut them into square pieces. Take a frying pan and heat some butter or oil. When the oil is heated enough add cumin seeds. It will sputter and a nice flavor will come out. Now add chopped onions and sauté till it gets light pink. Add salt now. Add ginger garlic paste at this stage. Fry, till it turns slightly brown.

After few minutes, add the chopped tomatoes. Fry them and make it a thick gravy form. Add turmeric, coriander, red chilly, amchur or dried mango powder and garam masala powders (Add all the dry powders together) and cook till the masala mixes well and wait till it releases oil, otherwise a raw smell will come out. In Masala brinjal recipe all the spices should be well cooked. The tomatoes and red chilly powder actually add a lovely red color to this recipe.

Now, its time to put brinjal into the pan with all the fried masala and cover the pan. Cook it in low flame. Open the lid of the pan and check if the brinjals are well fried.

Then add little water and let it cook for couple of minutes. So it’s better if all the masala are fried first and then cook the brinjals as it takes less time to get softer and tender. Garnish the dish with chopped coriander leaves and long pieces of tomatoes.

Masala brinjal is best served with Chapattis or Parathas.

It’s a very spicy dish. It is a pan fried with some of the exclusive Indian spices.

It is a dish of north-western side of India. So, it is best enjoyed with rotis and chapattis. Moreover, it provide essential nutrients, for instance it is a very good source of potassium and contains of water and fiber. It best suits for vegetarians.

Ingredients

  • 6-7 pieces of fresh and small brinjal
  • Turmeric powder – 1tbs (small)
  • Kashmiri red chilly powder-1 ½tbs (small)
  • Dhania powder/ coriander powder- 2tbs(small)
  • Curd- 1 bowl (medium)
  • Garam masala powder- 1tbs (small)
  • Tomato sauce- 3tbs (large)
  • Homemade tomato puree-2tbs(large)
  • Pan fried jeera powder/ fried cumin seeds powder-1tbs(small)
  • Kasuri methi/ fenugreek leaves-1tbs(small)
  • Coconut milk- 1cup
  • Ghee-1tbs(large)
  • Coriander leaves
  • Refined white oil – ½ cup (small)
  • Salt and sugar to taste

Method

Wash the binjals well. Then, keeping the stem as it is, with a knife cut half portion of the brinjal into four halves.

Now, take a bowl, add curd, turmeric, Kashmiri chilly powder, dhania powder, garam masala powder, salt and sugar. Mix it well. Make a batter like this:

Now, stuff this half of this mixture into the brinjals nicely. And keep the other half of the mixture aside. Keep it marinated for 5mins.

The stuffed brinjals will look like this:

Now, heat a pan. Add oil to it. Now, add the stuffed brinjals into it slowly. Fry it well till brown.

Then, add tomato sauce, homemade tomato puree(Grind together tomatoes, boiled red chilies, some garlic and salt then to this paste add 1tbs (small) liquid corn flour and stir it well) into it. Toss it well.

Now, add the left over mixture of curd into it and stir it well.

Now, keep it on heat for 5mins covered. When you will notice its turning red and oil starts, coming out of it, and then add fried jeera powder and kashuri methi into it. Stir it slowly.

Then, pour the coconut milk into it. Again, cover it for 3mins. Now, when you will find that that it turns red in colour, oil is coming out of it, and it’s almost dried up, that means its ready, now add ghee into it.

Serving Instructions

Pour it in a serving plate and garnish it with coriander leaves. Best serve hot with chapattis, rotis and parathas.

Brinjal Fry |

This recipe is from southern part sof India. Brinjal Fry or Eggplant Fry, is very simple recipe and quick to prepare. It tastes awesome with lemon rice. It can also be served as a side dish with rice and dal. In this recipe I have used fresh coconut for nice flavor.

  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp chana dal
  • 1/2 tsp urad dal
  • 2 red chilies
  • Few curry leaves
  • 1 big onion (thinly sliced)
  • 4 brinjals/eggplant (sliced)
  • Salt to taste
  • 1/4 tsp turmeric powder

For Masala

  • 6″ inch fresh coconut
  • 1 tsp red chili powder
  • 4 tsp fried gram dal
  • 3 garlic pods

Heat oil in a pan and add mustard seeds and cumin seeds, let them splutter.

Now add chana dal, urad dal, red chilies, curry leaves and fry them for a minute.

Now add onion and fry until the onion becomes soft. Now add brinjal slices, salt, turmeric powder and mix well. Cover the lid and cook them until the brinjal becomes soft at low flame.

Meanwhile grind all the masala ingredients for a fine powder and keep it aside.

When the brinjal is soft add the masala powder and mix well and cook for 2 more mins and then switch off the flame. Serve hot.

Serving Instructions

You can serve brinjal fry with lemon rice or roti.

This Brinjal Sesame Curry is a typical dish of Andhra Pradesh. Brinjal is the king of vegetables and rich in Potassium. The deep-fried brinjals just melt in the mouth. This curry tastes best with rice.

  • 6 small round brinjals
  • 100 gms white sesame seeds (til), roasted and ground
  • ¼ cup tamarind juice
  • 1 onion
  • 1 tsp ginger-garlic paste
  • Salt and red chilli powder to taste
  • ½ tsp turmeric
  • ½ tsp mustard
  • ½ tsp cumin
  • Few curry leaves
  • 1 tsp coriander powder
  • Coriander for garnish
  • A piece of jaggery
  • Oil for frying

Method

Wash the brinjals. Without removing the stem, turn the brinjal and make 2 slits over them. It should open like a flower.

Repeat the same for all brinjals and deep-fry them in oil or just fry them with little oil on frying pan, till they slightly change color and are soft. Remove and keep aside.

Heat 1 tbsp oil in a pan. Add mustard, cumin and curry leaves. Fry for few seconds and then add chopped onions and fry till golden brown. Add ginger-garlic paste, sesame seed powder, salt, red chilli powder, turmeric, coriander powder, jaggery and tamarind juice. Cook for sometime.

Add little water if necessary. Drop in the brinjals and close the lid so that the masala is coated to the brinjals. Cook for 10 minutes.

Sprinkle chopped coriander on top for garnish.

Stuffed Brinjal Masala |

Stuffed Brinjal Masala is quite popular in Andhra Pradesh. In some areas it is known as Guthi vankaya, however, in this recipe I have added tomato which makes it more delectable. Brinjal is high in water and potassium. It is supposed to possess many medical values, and is used as a remedy for cancer.

For Masala

  • 4 tsp fried groundnuts
  • 2 tsp fried sesame seeds
  • 2 tsp coriander powder
  • 5″ dry coconut piece
  • 4 garlic pods
  • 1 lemon size tamarind (soaked into warm water)
  • 6 whole red chilies
  • 1/4 tsp turmeric powder
  • Salt to taste

For curry

  • 4 medium size brinjals
  • 5 tsp oil
  • 1/4 tsp mustard seeds
  • 3/4 tsp cumin seeds
  • 1 onion (finely chopped)
  • 1 big tomato (finely chopped)

Take a mixer jar and put all the masala ingredients and make a fine paste by adding little water and keep it aside.

Now take the brinjals and slit each brinjal in to four sections lengthwise with out cutting the crown. Now the brinjals are ready for stuffing.

Now take each brinjal and stuff the masala properly and keep them aside.

Now heat oil in a pan and add the stuffed brinjals in to it and fry them on all sides. When it is done, remove it from oil and keep aside.

Now in the same oil, add mustard seeds and cumin seeds, let them splutter.

Add onion and fry until the onion becomes soft. Add tomato, salt and mix well. Then cover lid and cook for 5 mins in medium heat.

Now add the remaining masala, stuffed brinjals with sufficient water and cover the lid, cook them until the brinjals becomes soft and tender.

Switch off the flame and serve hot.

Serving Instructions

You can serve stuffed brinjal masala with rice or naan/chapati.
