Baked Pumpkin Pudding

  • 1 tablespoon of Honey
  • 1 pinch of ground Cinnamon
  • 1 pinch of ground Ginger
  • 1/2 pinch of ground Cloves
  • 1 cup of fat free Evaporated Milk
  • 1 tablespoon of reduced fat Whipped Topping

Procedure:

  1. Place egg substitute, pumpkin, sugar, honey and spices in a large mixing bowl.
  2. Beat until well blended. Beat in the milk gradually.
  3. Coat 5 x 250ml custard cups with non stick cooking spray and pour the mixture into them.
  4. Put the cups into a 40cm x 25cm x 2.5cm baking pan.
  5. In a preheated oven of 220 degrees C, cook for 10 minutes.
  6. Reduce the heat to 170 degrees C and bake an additional 30 to 35 minutes longer.
  7. Insert a knife near the center to test for doneness.
  8. If knife comes out clean, the pudding is done.
  9. This makes 5 servings and can be eaten warm or cold.
  10. Garnish with whipped topping. Store any leftover pudding in the refrigerator.

Ingredients:

  • 3 Eggs

  • 250g (9 oz) of Brown Sugar, firmly packed
  • 120g ( 4 oz) of Butter
  • 120ml (4 fl oz) of Milk

Procedure for caramel toppings:

  1. Combine all the ingredients together in a sauce pan.
  2. Stir while heating until well blended.
  3. Boil for 2 minutes.
  4. Pour over a HOT Apple Dapple Cake.

  1. Preheat your oven to 180 degrees C.
  2. Grease and flour a tube pan. Cream the sugar and eggs together.
  3. Add the oil and mix well.
  4. Next, combine all the dry ingredients.
  5. Add the chopped apples, nuts and vanilla, mixing together thoroughly.
  6. Pour into the prepared pan and cook until done.
  7. Test for doneness by inserting a toothpick or knife into the center of the cake.
  8. If the toothpick or knife comes out nearly clean, the cake is done.
