Chow mien traditionally is a Chinese dish but it has paved its way into Indian cuisine with Indian modifications. Chow mien in Kolkata is a popular street food. You can find people eating chow mien on roadside stalls. This dish is mostly eaten as an evening snack than for dinner. Also it’s a great dish to prepare for your children for variation.

- 200 gms of Hakka chow mien
- 1 medium sized onion chopped
- 1 green bell pepper roughly chopped
- 4 spring onions chopped
- 1 cup frozen sweet corn
- 2 tbsp soy sauce (dark)
- 4-5 cloves of garlic finely chopped
- 1 fresh red chilli sliced into 2
- 1 tsp freshly ground black pepper
- 1 tsp ajinnomoto or MSG
- Salt to taste
- 4 tbsp of refined oil
Boil the chow mien in water along with salt and a splash of oil. Once the strands are soft drain out the water and spread on a plate.
Sprinkle some oil and mix the chow mien well. This is to prevent the strands from sticking to each other.
Next heat a wok with the oil. Once the oil is heated up add the garlic and red chilli. Fry for about 30 sec.
Now add the onions, white part of spring onion and fry for about a minute. Once the onions add soft and translucent the corn and capsicum. Fry for another minuted.
Next add in the chow mien and mix very well so as to mix in the vegetables.
Now add the soy sauce, salt and MSG. Mix well. Finally sprinkle the black pepper and give it a quick mix. Serve hot.
Chow mien in Kolkata is having as it is with tomato ketchup or chilli sauce. You can also have it with a bowl of chilli chicken or chilli paneer.
