  • 1 Cauliflower, big sized and chopped into medium pieces
  • 2 medium size tomatoes, diced into square pieces
  • 2 medium sized onions diced into square pieces
  • 2 medium sized capsicum chopped into pieces
  • 20g green peas
  • 10g green peas, boiled
  • 1 medium sized potato, copped
  • 1 tsp ginger garlic paste
  • 1 tsp coriander powder
  • 1 tsp Cumin powder
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • White pepper
  • Black pepper
  • Mace
  • 1 tsp sugar
  • Salt
  • Ghee for frying

Method

Procure farm fresh vegetables and chop into medium pieces. Boil them for 5 minutes and drain the water present.

Mace and white pepper should be blended in a mixer grinder to form a powder.

Heat ghee in a kadhai. Add to it spices (cumin, black pepper, coriander, turmeric powder, red chili powder and salt). Cook for 3 minutes till it emits a mind boggling essence. Add the chopped vegetables (onions, tomatoes, capsicum and potatoes) to it. Add ginger garlic paste. Mix well with the help of a spatula.

Cook till the vegetables become soft. Add the blend of mace n white pepper to it.

  • 200 gm tofu ( cut into small strips)
  • 1 large tomato peeled and chopped
  • 3 cloves garlic crushed
  • ½ tsp cumin powder
  • ½ tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp red chilli powder
  • ¼ tsp garam masala
  • 1 onion chopped
  • ½ cup carrots julienned
  • ½ green bell pepper julienned
  • ½ cup green peas
  • 1 tbsp tomato puree
  • 1 tbsp apple cider vinegar
  • Salt to taste
  • 3 tbsp oil
  • Coriander leaves for garnishing

Heat the oil in a wok. Fry the garlic till they start to turn golden brown and add in the onion.

Fry till the onions are translucent and add the carrots and peas. Fry till the carrots are cooked.

Now add the tomatoes, coriander powder, cumin powder, garam masala, red chilli powder, turmeric powder and salt. Fry till mixture separates oil.

Now add in the apple cider vinegar, tofu and bell pepper. Mix well so that the spices coat the tofu.

Sprinkle with dried or fresh coriander leaves and serve hot.

Serving Instructions

Serve this delicious stir fry with noodles or fried rice. You can also have it as a meal itself along with some protein like steak or kebabs.
