Lunch box Italian style

And we get to another month of World on a Plate. For those of you who still don’t know, World on a Plate is a monthly blogging event at which bloggers from around the world get together and share a typical recipe from their home country. Today, we are sharing lunchboxes for the beginning of the school year.

In Italy lunch boxes are not as popular as they are over here, so it was quite challenging for me to come up with a recipe that would exemplify Italian lunch boxes. But then I thought I could give you an idea of what would go in a lunch box with a mix of stories and a roundup of recipes.

In Italy microwaves and refrigerators in offices are not nearly as common as on this side of the pond, hence lunch boxes have to pack food that is good cold and is not going to spoil easily. And of course it should be easy and fast to throw together in the morning. An easy choice for a complete meal that respects this characteristics is salad. All sorts of salads: regular salads, pasta salads, rice salads, grain salads. You name it.

Another easy thing to bring along is quiche. It can be prepared ahead, you can wrap it in aluminum foil and bring it with you, and you can make it with anything you have in the fridge.

 As you can see, the tell tell sign of it being a lunch box is that it is in a plastic Tupperware like container.

Saucy Greek Burgers : Greek Recipes

Saucy Greek Burgers – This distinctive, delicious, Greek burger recipe is made with ground lamb, and served with a one of a kind, exquisite, mint yogurt sauce recipe included. Also served in Pitas, for more Greek tradition, these phenomenal, BBQ burgers are a “Must Try”.

Ingredients to make Saucy Greek Burgers

For yogurt sauce:
12 Ounces plain yogurt
2 Small garlic cloves
1/4 Teaspoon salt
3 Tablespoons shredded fresh mint leaves, or to taste

For burgers:
2 Pounds ground lamb
1/2 Cup crumbled feta cheese
1/2 cup finely chopped pitted Kalamata olives, 12 to 15
6 small pita loaves
2 small vine-ripened tomatoes, sliced
2 small green bell peppers, cut in rings
1 red onion, sliced thin

Directions to make Saucy Greek Burgers

Step 1:Make yogurt sauce: Mince and mash the garlic with the salt. Drain yogurt in a sieve lined with a dampened paper towel set over a bowl 30 minutes. Transfer to a small bowl and combine with the garlic and mint.

Step 2:Prepare grill and oil rack. Set grill 5-6 inches from coals. In a bowl gently combine the lamb,feta and olives. Form into 6 patties about 1” thick. Season to taste with salt and pepper. Grill for about 7 minutes per side for medium-rare.

Step 3:Split pitas form a pocket.Transfer burgers to pita pockets and top with tomatoes, bell peppers and onion. Serve burgers with yogurt sauce.


Traditional Greek Souvlaki : Greek Recipes

Traditional Greek Souvlaki – This simple yet traditional Greek souvlaki recipe, is also a BBQ recipe, and is downright mouth watering! The marinated meat, grills quickly, depending on size of the pork chunks, and we served in a pita, with the salad inside, for an innovative new recipe.

Ingredients to make Traditional Greek Souvlaki

500 grams / 1 lb of pork in cubes
8 bamboo skewers
1/2 cup of olive oil
1 tablespoon of vinegar (wine vinegar)
1 pinch greek oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
8 large pita breads
Greek yoghurt or Greek tzatziki
Shreaded salad of lettuce, tomatoes, onion, herbs etc.

Directions to make Traditional Greek Souvlaki

Step 1:Cut the pork into small cubes and carefully thread onto the skewers. In a bowl place the olive oil, the wine vinegar, the oregano, the salt and the black pepper. Place the skewers with the pork in a dish and pour the marinade over them. Cover with plastic wrap and refrigerate for several hours or ovenight.

Step 2:Preheat your grill or barbeque. Place the souvlaki skewers over a medium heat and cook each side. Brush with the marinade and turn to cook evenly

Step 3:Brush the pita breads with olive oil and cook them on the grill. When the pita and the souvlaki are ready, pull the meat off one skewer into the pita, add tzatziki or greek yoghurt and the shreaded salad. Roll the pita to form a tight cone and wrap it in kitchen or other suitable paper. Serve hot.

Ingredients to make Greek Chicken and Pasta

1 pound uncooked angel hair pasta
1 tablespoon olive oil
4 (6-ounce) skinless, boneless chicken breasts, halved
2 cups chopped red onion
1 cup chopped yellow bell pepper
6 tablespoons fresh lemon juice
1 teaspoon dried basil
1/2 teaspoon dried oregano
1-2 garlic cloves, crushed
1 teaspoon italian seasoning
2 (14.5-ounce) cans diced tomatoes with basil, garlic, and oregano
3/4 cup (3 ounces) feta cheese, crumbled

Directions to make Greek Chicken and Pasta

Step 1:

Cook pasta according to package directions, omitting salt and fat.

Step 2:

Heat oil in a large nonstick skillet over medium-high heat. Add chicken to pan; sauté 3 minutes on each side. Add onion and next 5 ingredients (through tomatoes) to pan; stir well.

Step 3:

Cover, reduce heat, and simmer 25 minutes or until chicken is done. Remove from heat; sprinkle with cheese. Serve with pasta.
