Roasted tomato pasta and awards

Barbecue season is finally, maybe, starting also in the midwest and with it the question “what do I bring?”. I have a tendency to choose to bring pasta for at least a couple of good reasons: is cheap, is good, can be cooked in a number of different ways, and is easy to transport. This last time I chose to cook pasta with roasted tomatoes. It is very simple and makes quite an impression. I noticed that cooking a simple dish with flavorful ingredients is often more successful than cooking a complex dish, so I am sticking with those sort of dish when I cook for a lot of people: it make my life easier and the guests happy.

  • 1 lb spaghetti
  • 3 large tomatoes
  • 1 spoon capers
  • 1 large garlic clove
  • oregano
  • salt
  • pepper
  • EVOO
  • grated cheese (parmesan or pecorino)


  1. First I started the water for the pasta. Then I prepared a bit of aromatic oil by chopping capers, oregano and a clove of garlic and putting it in a bit of oil. I then sliced the tomatoes and arranged them on an oven dish so that they were not overlapping. I poured the seasoned oil on the tomatoes and seasoned the tomatoes with salt and pepper. I cooked the tomatoes in the oven for about 5 minutes. Meanwhile I cooked the spaghetti until al dente and drained them. I mixed the pasta with the tomatoes and added a bit of grated cheese (pecorino, parmesan or any other salty cheese works), mixed everything and brought to my first barbecue of the season.
  2. Pasta bowl was pretty much polished by the end of the barbecue and I received a number of compliments on the dish.

Sundried tomato bread

Today I am sharing a bread that smells like summer. It is a simple bread to which I added sundried tomatoes and oregano. The result is a bread that brings summer to all of us who have been fighting the cold and the snow for the last few months and cannot take it anymore!

Hope you enjoy it as much as I did!


  • 1 lb. flour
  • 1-2 tbsp oregano
  • 1/2 tsp active dry yeast
  • 1 and 1/2 cup water
  • 1/4 cups dried tomatoes preserved in oil
  • 1 tsp salt


  1. Mix the water with the yeast and add it to the flour.
  2. Add the salt and the oregano and knead everything into a smooth dough. Add more water or more flour if needed. You should get a rather soft but not sticky ball.
  3. Place the dough in a bowl and cover it with plastic wrap. Place in a warm place to rise for 4-8 hours (I usually use the oven with the light turned on).
  4. When the dough has doubled in volume, knead the tomatoes (drained and cut into stripes) in the dough. Then flatten the dough in a rectangles and roll it up in a tight roll. Attach the two end of the roll to form a circle and let the dough rise again.
  5. Turn on the oven at 450F. When the oven is hot, score the bread with deep cuts all around and bake.
  6. Cook the bread for about 35 minutes or until the smell of summer fills the kitchen (and the bread is golden brown).
  7. For a crusty bread, turn off the oven and let the bread in the oven for another 10 minutes with the door propped slightly open after that let the bread cool down on a cookie rack.
  8. For a soft bread, wrap the hot bread with a towel and let the bread cool down wrapped in the towel.

For yogurt sauce:
12 Ounces plain yogurt
2 Small garlic cloves
1/4 Teaspoon salt
3 Tablespoons shredded fresh mint leaves, or to taste

For burgers:
2 Pounds ground lamb
1/2 Cup crumbled feta cheese
1/2 cup finely chopped pitted Kalamata olives, 12 to 15
6 small pita loaves
2 small vine-ripened tomatoes, sliced
2 small green bell peppers, cut in rings
1 red onion, sliced thin

Directions to make Saucy Greek Burgers

Step 1:Make yogurt sauce: Mince and mash the garlic with the salt. Drain yogurt in a sieve lined with a dampened paper towel set over a bowl 30 minutes. Transfer to a small bowl and combine with the garlic and mint.

Step 2:Prepare grill and oil rack. Set grill 5-6 inches from coals. In a bowl gently combine the lamb,feta and olives. Form into 6 patties about 1” thick. Season to taste with salt and pepper. Grill for about 7 minutes per side for medium-rare.

Step 3:Split pitas form a pocket.Transfer burgers to pita pockets and top with tomatoes, bell peppers and onion. Serve burgers with yogurt sauce.

Ingredients to make Greek Chicken and Pasta

1 pound uncooked angel hair pasta
1 tablespoon olive oil
4 (6-ounce) skinless, boneless chicken breasts, halved
2 cups chopped red onion
1 cup chopped yellow bell pepper
6 tablespoons fresh lemon juice
1 teaspoon dried basil
1/2 teaspoon dried oregano
1-2 garlic cloves, crushed
1 teaspoon italian seasoning
2 (14.5-ounce) cans diced tomatoes with basil, garlic, and oregano
3/4 cup (3 ounces) feta cheese, crumbled

Directions to make Greek Chicken and Pasta

Step 1:

Cook pasta according to package directions, omitting salt and fat.

Step 2:

Heat oil in a large nonstick skillet over medium-high heat. Add chicken to pan; sauté 3 minutes on each side. Add onion and next 5 ingredients (through tomatoes) to pan; stir well.

Step 3:

Cover, reduce heat, and simmer 25 minutes or until chicken is done. Remove from heat; sprinkle with cheese. Serve with pasta.
