Jackfruit is very popular Asian Tropical fruit and like other tropical fruits, it is also rich in energy. It is rich in Vitamin-B 6, niacin, riboflavin and folic acid. It is also rich in dietary fiber and it has soft, easily digestible flesh. In this recipe, jackfruit is cooked with whole Indian spices, making it very tempting.

- 2 tbsp cooking oil
- 1 tsp cumin seeds
- 3 big cardamom
- 5 cloves
- 1″ cinnamon
- 2 bay leaves
- 3 medium onions
- 5 garlic pods
- 1/2″ ginger (finely chopped)
- 4 medium tomatoes
- 1 tsp. turmeric powder
- 1 tsp. red chilli powder
- 1 tsp. coriander powder
- 1 tsp. garam masala
- Salt to taste
- 500gm jackfruit (deep fried)
- Coriander leaves for garnish
Grind onion, ginger and garlic to a fine paste. And grind tomato to a fine paste and keep it seperately.
Heat the oil in a pressure cooker.
Add cumin seeds, big cardamom, cloves, bay leaves and stir for few seconds.
Now add paste of onion, garlic and ginger and stir it till golden brown.
Add turmeric powder, red chili powder, coriander powder, salt and stir for few seconds.
Add tomatoes paste and stir it until oil oozes out; then add jackfruit and stir for few seconds.
Now add 2 cups of water and steam it for 10 minutes.
Add garam masala and garnish with coriander leaves.
Serve Kathal Subzi with chapati, parantha or naan.
