  1. Preheat your oven to 175 degrees C.

  1. Preheat the oven to 165 degrees C.
  2. Using hot soapy water, wash a 25 cm angel food tube pan to make sure it is completely free of grease.
  3. Next, measure the flour, sugar, baking powder, and salt into a sifter, and sift into a large mixing bowl.
  4. Create a well in the middle of these dry ingredients. Going in the order listed, add the oil, egg yolks, water, vanilla, and lemon flavoring to the well. Set aside without beating.
  5. In another large mixing bowl, beat egg whites and cream of tartar together forming stiff peaks. Set this aside.

  2. Grease a 9×13 inch baking pan and set aside. In a large mixing bowl, combine flour, 80gs Confectioners’ sugar, and the butter.

  4. While the crust is baking, combine the eggs, white sugar, flour, and lemon juice and whisk together until the mixture is frothy.
